BABI ASAM MANIS

Dried mushrooms are an absolutely essential ingredient. The Mu-err mushrooms of this recipe are Chinese morels.

60 g (2oz) Mu-err mushrooms * 600 g (1 1/4 lb) lean pork * 3 tablespoons light soy sauce
2 tablespoons vinegar * 1 teaspoon salt * 1/2 teaspoon sugar * 4 tablespoons oil
2 onions * 1-2 leeks * 1 red and 1 green pepper * 1/2 cucumber
2 carrots * 1/4 litre (1/2 pint / 1 cup) bouillon * 1 tablespoon cornflour (starch)
Soak mushrooms as indicated on packet. Cut meat in thin slices. Prepare marinade from soy sauce, vinegar, salt and sugar and pour over meat slices. Cover and allow to stand for at least 1 hour.

Heat oil, coarsely chop onions and fry until translucent. Drain meat, add to onions and fry for about 3-4 minutes.

Add washed and sliced vegetables, fry quickly, pour in bouillon and stew over moderate heat for 20 minutes. Add mushrooms just before end of cooking time.
Blend cornflour in a little water and bind sauce. Serve on heated platter with rice or transparent vermicelli.
